Bhindi that is not slimy

People say they do not like bhindi. What they do not like is slimy bhindi, and that is a cooking problem, not a vegetable problem.

Okra releases a sticky liquid when it meets water and low heat. Keep water away and the heat up, and it never happens.

This serves four.

What you need

  • Half a kilo bhindi
  • 2 onions, sliced
  • 2 tomatoes, chopped
  • Half a cup of oil
  • Salt

Three rules before you start

  1. Wash the bhindi, then dry it completely. A cloth, then twenty minutes in the air. Wet okra is slimy okra, and nothing you do later undoes it.
  2. Never cover the pan. The lid traps steam, the steam is water, and the water is the problem.
  3. Do not add a single drop of water. Whatever moisture it needs comes from the tomatoes.

Method

  1. Cut the bhindi into pieces about an inch long. Throw away the very top and the very tip.
  1. Heat the oil well. Cumin seeds first — they should crackle within seconds.
  1. Onions, until golden. Then the bhindi, straight in.
  1. Now leave it alone. Stir every couple of minutes, not constantly. Every stir breaks the pieces and more liquid comes out. Medium-high flame, uncovered, seven or eight minutes until the edges brown.
  1. Tomatoes, salt, turmeric, chilli powder and coriander powder. Five more minutes.
  1. Chilli flakes at the very end, off the heat.

Why turmeric matters more here than anywhere

Bhindi is a pale vegetable in a plain masala. There is no tomato-heavy gravy, no browned onion paste, nothing to cover for a dull spice — so whatever colour and smell the dish has came out of the packet.

If your turmeric is bright, unnatural yellow, that colour is not turmeric. Real haldi is the colour of mustard. Try the water test: half a spoon in a glass of warm water, left alone. Real haldi settles and leaves the water faintly yellow. Adulterated turmeric clouds it immediately.
